When I opened the cupboard to see roots growing out of my sweet potato, I knew it was time to make some muffins.
Sweet Potato Muffins
1 medium sweet potato (8 oz)
2 cups dry oatmeal
1/4 cup Splenda
2 teaspoons cinnamon
5 egg whites and 1 egg
1 Tablespoon vanilla extract
Preheat oven to 350° F.
Puncture the sweet potato several times and microwave it for about 8 minutes. Scoop out the orange part and mash it in a bowl. Mix it with the rest of the ingredients.
Grease a muffin pan and spoon the mixture into the cups. Bake for approximately 30 minutes.
This is a quick and easy recipe which is high in carbs and protein. I used to mix it up before I did weights and they’d be warm and ready at the end of my routine, ready to refuel my muscles. I usually halve the recipe because I’m prone to eat the whole batch. Note: I’m avoiding artificial sweeteners right now, so for this instance I subbed the Splenda with real sugar.

My friend preformed in The Vagina Monologues this weekend in addition to helping plan the event which raised thousands of dollars for the local YWCA and rape assistance program. I’m so proud of her! She also works full time, takes 15 hours of classes, and wrapped individual presents for each cast member, complete with ribbons made out of some strange substance called “wraphia” which is the inbred child of ribbon and hay. I don’t know how she does all this. Maybe she secretly has a twin sister and they’ve been pretending to be the same person for the past umpteen years I’ve known her/them.
I wanted to help her celebrate the climax of all her hard work, so I undertook some thematic baking. If you are exceedingly moral or are put off by vulgar flour-based imagery, stop reading now. And if you are exceedingly moral, why are you reading my blog anyway? :)

I’m starting to get bored of my regular meals, so that means it’s time to start experimenting in the kitchen again. When choosing new recipes I look for two things:
1) Nothing too complicated or complex. If it involves separating egg whites or getting out the sifter it’s a no go. Do I even own a sifter?
2) No weird ingredients. I’m not adverse to buying one or two new spices or veggies for a recipe, but if it turns into a grocery store scavenger hunt that requires me to find eye of newt, it’s out. No toil or trouble.
Lately, I’ve been surfing this thread at a South Beach diet site which has links to tons of recipes. Today I tried:
Apple Strudel Muffins
Makes 12 muffins
Topping:
1/4 cup Splenda
1/4 cup whole wheat flour
1/4 tsp ground cinnamon or to taste
1/8 cup melted margarine
Muffin:
2 cups whole wheat flour
1/2 cup Splenda
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup apple juice*
1/3 cup Canola oil
1 egg
1 teaspoon ground cinnamon
1 cup apples – peeled, cored and diced
